Ingredients
- 4 bone-in chicken thighs (about 1.5 lbs)
- 8 oz fresh cremini mushrooms, sliced
- 1 cup heavy cream
- 4 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 2 tsp fresh thyme (or 1 tsp dried)
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Prepare your ingredients by chopping garlic and slicing mushrooms.
- Heat olive oil in a large skillet over medium-high heat. Season chicken thighs with salt and pepper, then sear skin-side down until golden brown (5-7 minutes per side). Remove from pan and set aside.
- In the same skillet, add mushrooms and sauté until golden brown (about 5 minutes). Add minced garlic and cook for another minute.
- Pour in chicken broth, scraping any bits from the bottom of the pan. Let simmer for a couple of minutes before adding heavy cream and thyme. Stir to combine.
- Return chicken thighs to the skillet, skin-side up, and simmer on low heat for about 20-25 minutes until the internal temperature reaches 165°F (75°C).
- Serve hot with rice or pasta, generously ladling creamy mushroom sauce over the top.
