- 2 cups fresh kale, chopped
- 8 oz cremini mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish with olive oil.
- Cook the penne pasta in salted boiling water until al dente (about 7 minutes). Drain and reserve 1 cup of pasta water.
- In a skillet over medium heat, sauté garlic in olive oil for 30 seconds. Add mushrooms and kale; cook until mushrooms are golden and kale is wilted (about 5 minutes).
- Reduce heat to low, pour in heavy cream and half of the reserved pasta water. Season with salt and pepper.
- In a large bowl, combine cooked pasta with the creamy mushroom-kale mixture. Transfer to the baking dish.
- Top with mozzarella and parmesan cheeses. Bake for about 25 minutes until bubbly and golden brown.
