Ingredients
- 3–4 boneless skinless chicken breasts (about 1 lb)
- 4 tablespoons butter (divided)
- 1 cup diced carrots
- 1 cup frozen peas
- 2 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons fresh thyme (chopped)
- 2 tablespoons fresh parsley (chopped)
- 1 sheet puff pastry
- Salt and pepper to taste
Instructions
- 1. Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- 2. In a skillet over medium heat, melt 2 tablespoons of butter. Season chicken with salt and pepper, then cook until golden brown on both sides (about 6 minutes per side). Remove and chop into bite-sized pieces.
- 3. In the same skillet, add remaining butter if necessary and sauté diced carrots for about 5 minutes. Stir in frozen peas until warmed through.
- 4. Pour in chicken broth and bring to a simmer. Whisk in heavy cream, then stir in chopped herbs.
- 5. Combine cooked chicken with the sauce and vegetables in the skillet. Pour into the prepared baking dish and cover with puff pastry, sealing the edges tightly.
- 6. Cut slits in the pastry for steam to escape and bake for about 25 minutes until golden brown.
