Simple to prepare and versatile enough for appetizers or sandwiches, this recipe will become a go-to favorite. Top it with fresh rosemary and a drizzle of olive oil for a flavor experience that’s both comforting and satisfying.

Ingredients

Scale
  • 4 cups all-purpose flour
  • 1 ½ cups warm water (110°F/43°C)
  • 2 tsp active dry yeast
  • ¼ cup extra virgin olive oil (plus more for drizzling)
  • 2 tbsp fresh rosemary (chopped)
  • 2 tsp sea salt

Instructions

  1. 1. Activate the Yeast: Mix warm water and yeast in a small bowl; let sit for 5 minutes until frothy.
  2. 2. Mix Ingredients: In a large bowl, whisk together flour and sea salt. Add yeast mixture and half of the olive oil; stir to form a shaggy dough.
  3. 3. Knead Dough: Transfer dough to a floured surface; knead for about 10 minutes until smooth.
  4. 4. First Rise: Shape into a ball, place in an oiled bowl, cover with a damp cloth, and let rise until doubled (about 1 hour).
  5. 5. Shape & Second Rise: Punch down the dough, transfer to a parchment-lined baking sheet, shape it, dimple the surface with fingers, drizzle remaining olive oil, sprinkle rosemary on top, and let rise for an additional 30 minutes.
  6. 6. Bake: Preheat oven to 425°F (220°C). Bake for about 25 minutes until golden brown.

Keywords: For added flavor, mix in sun-dried tomatoes or olives into the dough. If fresh rosemary is unavailable, dried rosemary can be used but reduce the quantity as it's more potent. Store leftover focaccia at room temperature in an airtight container for up to three days.
