  • 1/2 cup warm water
  • 1/2 lb ground pork shoulder
  • 1/2 cup low-sodium chicken broth
  • 1 tbsp gelatin powder
  • 1 tbsp light soy sauce
  • 1 tsp sesame oil
  • 1 tbsp minced fresh ginger
  • Salt to taste

Instructions

  1. Prepare the broth gel by simmering chicken broth and stirring in gelatin until dissolved. Pour into a shallow dish and refrigerate until set.
  2. In a bowl, combine flour and warm water to form a rough dough. Knead for about 10 minutes until smooth, then cover and let rest for at least 30 minutes.
  3. For the filling, mix ground pork with minced ginger, soy sauce, sesame oil, and salt until combined. Once the broth gel is firm, chop it into small pieces and fold into the pork mixture.
  4. Roll rested dough into golf ball-sized portions, then flatten each into circles about three inches wide.
  5. Place filling in the center of each circle and pinch pleats around the filling to seal tightly.
  6. Steam dumplings over boiling water for 6-8 minutes until cooked through.
