Ingredients

  • 2 lbs pork neck bones
  • 2 lbs pork trotters
  • 45 liters water
  • 6 cloves garlic, crushed
  • 1 thumb-sized piece ginger, sliced
  • ¼ cup low-sodium soy sauce
  • 2 tbsp miso paste (optional)

Instructions

  1. 1. Rinse pork bones under cold water to remove impurities.
  2. 2. Blanch the bones by boiling them in water for 10 minutes. Drain and rinse again.
  3. 3. Return cleaned bones to pot, add fresh water, garlic, and ginger. Bring to a boil and reduce to a simmer.
  4. 4. Simmer uncovered for at least 8 hours.
  5. 5. Strain the broth through a fine-mesh sieve or cheesecloth.
  6. 6. Stir in soy sauce and miso paste (if using) to taste. Serve hot over cooked noodles with your choice of garnishes.
