  • 8 oz (225g) fresh mushrooms (cremini or button), chopped
  • 2 tbsp (30ml) olive oil
  • 1 tsp fresh thyme leaves
  • 1 flatbread (store-bought or homemade)
  • 1 cup (100g) mozzarella cheese, shredded
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, heat olive oil. Add sliced onions and cook until golden brown, about 15-20 minutes.
  2. Add chopped mushrooms to the skillet. Season with salt and pepper; sauté until tender, about 5-7 minutes.
  3. Preheat the oven to 400°F (200°C). Place flatbread on a baking sheet lined with parchment paper.
  4. Spread the onion-mushroom mixture evenly over the flatbread, then top with shredded cheese and thyme.
  5. Bake in the preheated oven for 10-12 minutes until the cheese is bubbly and golden brown.
