  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 2 tablespoons curry powder
  • 1 cup coconut milk
  • 1/4 cup low-sodium soy sauce
  • 1 medium onion, finely chopped
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. Pound chicken breasts to half an inch thick; season with salt and pepper.
  2. Set up a breading station: one bowl with flour seasoned with salt and pepper, another with beaten eggs, and the last with panko breadcrumbs. Dredge each chicken breast in flour, dip in egg, then coat generously with panko.
  3. In a skillet over medium heat, add vegetable oil to cover the bottom. Fry chicken for about 4-5 minutes per side until golden brown and cooked through. Drain on paper towels.
  4. For the curry sauce, heat oil in another pot and sauté chopped onions until translucent. Add garlic and ginger followed by curry powder; cook until fragrant.
  5. Stir in coconut milk and soy sauce; simmer gently for about ten minutes until slightly thickened.
  6. Slice crispy chicken katsu and serve topped with curry sauce over rice or noodles.
