Instructions

  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, mix sugar and oil until smooth. Add eggs one at a time, then buttermilk, vanilla extract, and red food coloring; whisk until combined.
  4. Gradually add the dry ingredients to the wet mixture, mixing gently until just blended.
  5. Fill each muffin cup two-thirds full with batter and bake for 15-18 minutes or until a toothpick comes out clean.
  6. Cool in the pan for five minutes before transferring to wire racks. For frosting, beat cream cheese and butter until fluffy; gradually add powdered sugar and mix well.
