  • 1 lb Andouille sausage, sliced
  • 1 lb boneless chicken thighs, diced
  • 1 lb fresh shrimp, peeled and deveined
  • 1 cup bell peppers (mixed red and green), diced
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes with juices
  • 1 cup long-grain rice
  • 2 cups low-sodium chicken stock
  • 2 tsp Cajun seasoning

Instructions

  1. In a large pot over medium heat, sauté the Andouille sausage and chicken until browned (about 5-7 minutes). Remove and set aside.
  2. In the same pot, add onions, bell peppers, and garlic; sauté until softened (about 3-4 minutes).
  3. Stir in diced tomatoes and rice until well combined.
  4. Pour in chicken stock and Cajun seasoning; bring to a boil. Reduce heat to low, cover, and simmer for about 20 minutes.
  5. Gently fold in shrimp; cover again for another few minutes until shrimp are pink.
  6. Serve hot, garnished with fresh parsley if desired.
