- 1 can (14.5 oz) diced tomatoes (no added sugar)
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- 1. Preheat the oven to 375°F (190°C) and spray a 9×13 inch baking dish with nonstick cooking spray.
- 2. Season chicken breasts with salt and pepper. Cook in a skillet over medium heat for about 6–7 minutes per side until fully cooked.

- 4. Layer half of the sauce mixture in the baking dish, followed by half of the tortillas, shredded chicken, spinach, and cheese. Repeat layers with remaining ingredients.
- 5. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake an additional 10–15 minutes until bubbly and golden brown.
