  • 3 cloves garlic, minced
  • 1 cup bell peppers, diced (any color)
  • 1 cup low-sodium chicken broth
  • 2 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese for topping (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, sauté the onion and garlic in olive oil until softened (about 3 minutes). Add bell peppers and cook for another 2 minutes.
  3. Stir in the ground turkey, breaking it up as it cooks until no longer pink (about 5 minutes). Season with cumin, paprika, salt, and pepper.
  4. Add the cubed sweet potatoes and chicken broth to the skillet. Let it simmer for about 10 minutes until the sweet potatoes are tender.
  5. Transfer the mixture to the prepared baking dish. Top with cheese if desired.
  6. Bake for about 25 minutes or until golden brown on top. Serve warm.
