Ingredients

- 1 cup long grain rice
- 1 cup full-fat Greek yogurt
- 1 medium cucumber, grated
- 2 tbsp fresh dill, chopped
- 2 tbsp lemon juice (about 1 lemon)
- 3 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- 2 cups water
Instructions

- In a bowl, mix rice with water and half of the lemon juice and garlic; pour over the chicken.

- Bake for 25-30 minutes or until chicken reaches an internal temperature of 165°F (74°C). Uncover for the last few minutes to brown.
