Instructions
- Preheat oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
- In a large bowl, mash the ripe bananas until smooth.
- Mix in eggs, honey (or maple syrup), and protein powder until well combined.
- In another bowl, combine oats, baking powder, and cinnamon. Gradually fold this mixture into the wet ingredients until just combined.
- Spoon batter into the muffin tin, filling each cup about two-thirds full.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean. Allow to cool before serving.
