  • 1 lb shrimp, deveined
  • 8 flour tortillas
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 can (4 oz) green chiles
  • 1 cup low-sodium chicken broth
  • 1 cup shredded sharp cheddar cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking dish with nonstick spray.
  2. In a skillet over medium heat, sauté the shrimp in olive oil for 3-5 minutes until pink and opaque. Season with salt and pepper.
  3. In a bowl, mix softened cream cheese, sour cream, and half of the chicken broth until smooth. Stir in the remaining broth and green chiles.
  4. Spread some sauce at the bottom of the baking dish. Fill each tortilla with shrimp, roll tightly, and place seam-side down in the dish.
  5. Pour remaining sauce over the enchiladas and top with cheddar cheese.
