  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • 2 tbsp granulated sugar
  • 8 oz cream cheese, softened
  • 1/4 cup sour cream
  • 1 tsp vanilla extract
  • 1 cup pineapple slices (fresh or canned)
  • 2 tbsp brown sugar

Instructions

  1. Preheat the oven to 325°F (160°C) and lightly spray a muffin tin with nonstick cooking spray.
  2. In a bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until sandy. Press this mixture evenly into the bottom of each muffin cup.
  3. In another bowl, beat the cream cheese and sour cream until smooth. Add the vanilla extract and sugar; mix until fluffy.

  5. Spoon the cheesecake filling over the pineapple slices until nearly full.
