Ingredients
1 cup all-purpose flour
1 cup granulated sugar
½ cup unsweetened cocoa powder
1 tsp baking powder
½ tsp baking soda
Pinch of salt
8 ounces dark chocolate (70% cocoa)
4 large eggs (room temperature)
2 cups heavy cream
½ cup granulated sugar for mousse
Instructions
Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
In a bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt. In another bowl, whisk eggs with melted butter and milk until frothy. Combine both mixtures.
Pour batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean. Allow to cool completely.
For the mousse, melt dark chocolate and let cool. Whip one cup of heavy cream to soft peaks; set aside. Beat remaining eggs with sugar until thick and pale; fold in cooled chocolate and whipped cream gently.
Pour mousse over cooled cake and chill for at least two hours before serving.
