Ingredients
2 pounds bone-in chicken pieces
2 tablespoons Jamaican curry powder
1 can (13.5 oz) full-fat coconut milk
1 medium onion, chopped
4 cloves garlic, minced
1 tablespoon freshly grated ginger
1 cup diced red and green bell peppers
2 chopped scallions
Instructions
Marinate chicken with curry powder, salt, and pepper. Refrigerate for at least 30 minutes.
In a large pot, sauté onions in oil until translucent. Add garlic, ginger, and sauté until fragrant.
Brown marinated chicken on all sides, then remove from pot.
Stir in coconut milk and bell peppers; return the chicken to the pot. Simmer covered for 30-45 minutes until cooked through.
