Ingredients
24 ounces cream cheese (softened)
8 ounces white chocolate (melted)
1 cup granulated sugar
3 large eggs (room temperature)
1 cup fresh raspberries
1 ½ cups graham cracker crumbs
½ cup melted butter
½ cup heavy cream
Instructions
Preheat oven to 325°F (160°C). Combine graham cracker crumbs and melted butter; press into the bottom of a springform pan. Bake for 10 minutes and cool.
Beat cream cheese and sugar until smooth. Add melted white chocolate and eggs one at a time, mixing well.
Incorporate heavy cream until just combined.
Blend raspberries into a puree; swirl half into the cheesecake batter.
Pour half the batter over the crust, dollop remaining raspberry puree, then add remaining batter and swirl gently.
Bake in a water bath for 60-70 minutes until edges are set. Cool at room temperature before refrigerating overnight.
