Ingredients
2 pounds beef chuck, cut into 1–2 inch cubes
3 medium carrots, sliced
2 large onions, diced
4 cloves garlic, minced
1 cup dry red wine (like Cabernet Sauvignon)
4 cups low-sodium beef broth
1 teaspoon dried thyme
2 bay leaves
Salt and pepper to taste
Olive oil for searing
Instructions
Prepare your ingredients by cutting the beef and vegetables.
In a large Dutch oven, heat olive oil over medium-high heat. Season the beef with salt and pepper, then sear until browned on all sides. Remove and set aside.
In the same pot, sauté onions until translucent, then add garlic and carrots.
Deglaze with red wine, scraping up any browned bits. Allow it to reduce for about 10 minutes.
Return the beef to the pot along with broth, thyme, and bay leaves. Bring to a boil, then reduce heat to low and simmer for at least two hours until tender.
Notes
For added depth of flavor, consider adding mushrooms or bacon.
This stew can be made ahead of time; the flavors deepen overnight in the fridge.
