Ingredients
4 boneless, skinless chicken breasts
8 oz fresh cremini or button mushrooms (sliced)
2 tbsp extra virgin olive oil
¾ cup dry or semi-dry Marsala wine
2 tbsp unsalted butter
2 cloves garlic (minced)
Fresh parsley (for garnish)
Instructions
Pat chicken breasts dry and season with salt and pepper. Sear in a hot skillet with olive oil for about 5 minutes on each side until golden brown. Remove and keep warm.
In the same skillet, add sliced mushrooms and cook until they release their juices (approximately 5 minutes). Add minced garlic and sauté until fragrant.
Deglaze the pan with Marsala wine, scraping up any browned bits, and let simmer until reduced by half.
Return the chicken to the skillet, cover, and simmer for an additional 5 minutes. Stir in butter until melted.
Serve hot, garnished with fresh parsley.
