300 grams fresh spinach

200 grams paneer, cubed

1 large onion, finely chopped

1 tablespoon ginger-garlic paste

1 teaspoon cumin seeds

1 teaspoon garam masala

½ teaspoon turmeric powder

Red chili powder (to taste)

2 tablespoons cream

Salt (to taste)

Oil or ghee for cooking


Instructions

Blanch the spinach in boiling water for 2 minutes, then transfer to an ice bath. Drain and blend until smooth.

Heat oil in a pan; add cumin seeds until fragrant. Sauté onions until golden brown, then stir in ginger-garlic paste and cook for an additional 3 minutes.

Add spices and mix well before incorporating the spinach puree. Simmer for 5 minutes.

Gently fold in the paneer cubes and simmer covered for about 10 minutes to allow flavors to meld.

Notes

For added flavor, try including mustard greens or fenugreek leaves alongside spinach. Adjust spice levels based on your preference by using less or more red chili powder.
