Ingredients
500 grams fresh spinach
250 grams paneer (cubed)
1 medium onion (finely chopped)
2 ripe tomatoes (chopped)
2 tablespoons vegetable oil
Spices: cumin seeds, garam masala, turmeric powder, red chili powder
Instructions
Blanch spinach in boiling water for 2 minutes; transfer to ice water to cool. Drain and blend to a smooth puree.
In a pan, heat oil and sauté cumin seeds; add chopped onions until translucent. Stir in tomatoes and cook until softened.
Mix in the spinach puree, followed by spices. Gently fold in paneer cubes and simmer for 10 minutes.
Serve hot, garnished with fresh coriander.
