Ingredients

Scale

1.5 lbs boneless chicken thighs

8 oz fresh mushrooms (cremini or button)

1 cup long-grain white rice

1 medium onion

3 cloves garlic

4 cups low-sodium chicken broth

2 tbsp olive oil

Seasonings: salt, pepper, paprika, thyme, bay leaves

Instructions

Heat olive oil in a large pot over medium heat. Sauté chopped onion until translucent, then add minced garlic and sliced mushrooms; cook until mushrooms release moisture.

Add chicken thighs to brown on all sides (about 6-8 minutes per side). Remove chicken temporarily.

Stir in rice and broth, then return chicken on top. Bring to a boil, reduce heat, and simmer for about 15 minutes.

Once liquid is absorbed, let sit covered for an additional five minutes before serving.

Notes

For extra flavor, try adding seasonal vegetables like spinach or zucchini.

Use different mushroom varieties for unique taste profiles.
