Ingredients
2 medium-sized eggplants
4 cups marinara sauce (store-bought or homemade)
2 cups shredded mozzarella cheese
2 cups grated Parmesan cheese
½ cup extra virgin olive oil
½ cup fresh basil leaves
Instructions
1. Prepare the eggplants by slicing them into half-inch rounds, salting them to draw out moisture and bitterness, then rinsing and patting dry.
2. Heat olive oil in a skillet over medium heat and fry the eggplant slices until golden brown on both sides. Drain on paper towels.
3. Preheat the oven to 375°F (190°C). In a baking dish, layer marinara sauce, fried eggplants, mozzarella, and Parmesan cheese. Repeat layers until all ingredients are used, finishing with cheese on top.
4. Bake uncovered for 30–40 minutes until bubbly and golden brown. Let it rest for 10 minutes before serving
