Soft, chewy oatmeal cookies loaded with sweet butterscotch chips—perfect for any occasion!

- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3 cups old-fashioned oats
- 1 2/3 cups butterscotch chips
Instructions
- Preheat & Prep: Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- Mix Wet Ingredients: In a large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs and vanilla extract.
- Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, cinnamon, and salt. Gradually add this mixture to the wet ingredients.
- Add Oats & Chips: Stir in oats and butterscotch chips until well combined.
- Shape & Bake: Drop rounded tablespoons of dough onto prepared baking sheets. Bake for 8–10 minutes, or until golden brown.
- Cool: Let cookies cool on baking sheets for 2 minutes, then transfer to wire racks to cool completely.
Notes
- For chewier cookies, slightly underbake them.
- Swap butterscotch chips for chocolate chips or raisins if desired.
- Store in an airtight container at room temperature for up to a week.
