Ingredients

1 teaspoon smoked paprika

2 bay leaves
Instructions
Rinse lentils under cold water until clear; drain.
In a large pot, heat olive oil over medium heat. Sauté onions for 3-4 minutes, then add carrots and celery. Cook for an additional 5-7 minutes until softened. Add garlic and sauté for another 30 seconds.
Stir in cumin, smoked paprika, and lentils. Pour in vegetable broth, bring to a simmer, then add bay leaves.
Cover partially and let simmer on low for 25-30 minutes until lentils are tender but still hold shape. Season with salt, pepper, and a squeeze of lemon juice before serving.
