Ingredients

– 4 pounds bone-in chicken pieces (thighs or drumsticks)

– 1 can (28 ounces) crushed tomatoes (preferably San Marzano)

– 1 large bell pepper (red or yellow), sliced

– 1 medium yellow onion, diced

– 4 cloves garlic, minced

– 2 tablespoons fresh basil, chopped

– 2 tablespoons fresh parsley, chopped

– 1 tablespoon dried oregano

– 1 cup dry red wine (such as Chianti)

– 2 tablespoons extra virgin olive oil

– Salt and pepper to taste

Instructions

1. Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until translucent.

2. Add bell pepper and cook until softened. Remove vegetables from the skillet.

3. Season chicken with salt and pepper; brown in the skillet for about 8 minutes per side.

4. Deglaze the pan with red wine, scraping up any browned bits. Stir in crushed tomatoes and oregano.

5. Return vegetables to the skillet; simmer covered for 35-45 minutes until chicken is cooked through.

6. Stir in fresh basil and parsley before serving.

Notes

For a twist on traditional flavors, consider adding mushrooms or olives to enhance depth.

If you’re short on time, use skinless thighs to ensure tenderness without lengthy cooking.
