Ingredients

– 1 pound beef chuck roast, cubed

– 1 cup pearl barley

– 2 medium carrots, diced

– 8 cups low-sodium beef broth

– Salt and pepper to taste


Instructions

1. Heat olive oil in a large pot over medium-high heat. Sear the cubed beef until browned; remove and set aside.
