Ingredients

– 4 skinless salmon fillets (about 6 oz each)

– 1 can (14 oz) full-fat coconut milk

– 2 tablespoons red curry paste

– 1 cup bell peppers (sliced)

– 1 cup broccoli florets

– 1 cup snap peas

– Fresh cilantro for garnish


Instructions

1. Prepare the vegetables by washing, slicing, and setting aside.

2. In a skillet over medium heat, add oil and cook the salmon fillets for about 3-4 minutes on each side until golden brown. Remove and keep warm.
