1 ½ cups graham cracker crumbs

– 6 tablespoons unsalted butter (melted)

– 16 ounces cream cheese (softened)

– ¾ cup granulated sugar (divided)

– 2 large eggs

– 1 cup heavy cream

– 1 tablespoon vanilla extract

– 2 tablespoons brown sugar (for topping)


Instructions

Preheat your oven to 325°F (163°C) and line an 8×8 inch baking dish with parchment paper.

2. In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup sugar until combined. Press into the bottom of the lined pan and bake for 10 minutes.

3. Beat softened cream cheese and remaining sugar until smooth. Add eggs one at a time, mixing well after each addition. Blend in heavy cream and vanilla extract.

4. Pour filling over cooled crust and bake at 300°F (150°C) for about 35-40 minutes until set but slightly jiggly in the center.

5. Cool completely, then chill in the refrigerator for at least four hours or overnight before caramelizing the top with brown sugar.
