- 2 tbsp kosher salt
- 1 tbsp freshly ground black pepper
- 4 cloves garlic, minced
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 4 tbsp olive oil
Instructions
- Season the Tenderloin
Pat dry the beef tenderloin and season generously with salt, pepper, garlic, rosemary, and thyme. Let it rest at room temperature for 1 hour. - Sear the Meat
Heat 2 tbsp olive oil in a skillet over medium-high heat. Sear the tenderloin for 3 minutes per side until browned. Transfer to a foil-lined roasting pan. - Roast
Preheat the oven to 425°F (220°C). Drizzle the tenderloin with the remaining olive oil and roast for 25-40 minutes, using a meat thermometer to check doneness (130°F for medium-rare). - Rest and Serve
Let the tenderloin rest under foil for 20 minutes before slicing against the grain. Serve with your favorite sides.
