Ingredients

  • 2 medium chicken breasts (approx. 1 lb)
  • 12 oz pasta (penne or fusilli)
  • 2 cups fresh tomatoes, diced
  • 1 cup fresh basil, chopped
  • 3 cloves garlic, minced
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper, to taste

Instructions

  • Marinate the Chicken
    Marinate chicken breasts in 1 tbsp olive oil, salt, pepper, 1 minced garlic clove, and ¼ cup chopped basil for 30 minutes. Grill until fully cooked (165°F), then slice into strips.
  • Cook the Pasta
    Boil pasta in salted water until al dente. Drain and toss with 1 tbsp olive oil.
  • Prepare the Tomato Mixture
    Combine diced tomatoes, remaining basil, garlic, balsamic vinegar, and a drizzle of olive oil.
  • Combine and Serve
    Toss pasta with the tomato mixture and grilled chicken. Serve warm, garnished with fresh basil and optional Parmesan cheese.
