Description

This Sweet and Spicy Honey Pepper Chicken is a delightful blend of tender chicken thighs, sweet honey, vibrant bell peppers, and a touch of heat. It’s a quick, flavorful dish perfect for weeknight dinners or special occasions.

Ingredients

  • Chicken Thighs: 1 lb (450 g), boneless and skinless
  • Honey: 1/3 cup (80 ml)
  • Bell Peppers: 1 cup (150 g), assorted colors, sliced
  • Soy Sauce: 2 tbsp (30 ml), low-sodium
  • Garlic: 3 cloves, minced
  • Red Pepper Flakes: 1 tsp (5 g), or to taste

Instructions

  • Marinate the Chicken:
    • Combine honey, soy sauce, garlic, and red pepper flakes.
    • Pour over chicken thighs in a resealable bag or dish. Marinate for at least 1 hour or overnight.
  • Prep the Bell Peppers:
    • Wash, deseed, and slice the bell peppers into uniform strips.
  • Cook the Chicken:
    • Heat oil in a skillet over medium-high heat. Sear chicken thighs for 3-4 minutes per side until golden and cooked through (165°F/75°C). Remove and keep warm.
  • Make the Sauce:
    • Add reserved marinade to the skillet and simmer until slightly thickened, about 5 minutes.
  • Combine:
    • Return chicken to the skillet, add bell peppers, and cook for 2-3 minutes until peppers are tender-crisp. Serve hot

Notes

  • Adjust the red pepper flakes to match your spice preference.
  • Substitute honey with agave syrup for a vegan-friendly twist.
  • Serve with rice or quinoa to make it a complete meal.
