Description

A comforting twist on the classic French onion soup, this version features tender chicken, caramelized onions, and a cheesy bread topping for a hearty, flavorful meal.


Ingredients

  • 1 lb boneless, skinless chicken breasts, diced
  • 4 medium yellow onions, thinly sliced
  • 3 garlic cloves, minced
  • 6 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 tbsp fresh or dried thyme
  • 2 cups shredded Gruyère cheese
  • 4 slices of crusty French or sourdough bread
  • Salt and pepper to taste

Instructions

  • Caramelize Onions: Heat olive oil in a large pot over medium heat. Add sliced onions and a pinch of salt. Cook for 20-30 minutes, stirring often, until golden brown.
  • Add Garlic and Thyme: Stir in garlic and thyme, cooking for 1-2 minutes until fragrant.
  • Simmer Soup: Add chicken broth and diced chicken. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until chicken is fully cooked.
  • Prepare Bread: Toast bread slices under the broiler until golden brown.
  • Assemble and Broil: Ladle soup into bowls. Top each with a slice of bread and a generous amount of Gruyère cheese. Broil until cheese is melted and bubbly. Serve warm.

Notes

  • For a richer flavor, deglaze the pot with 1/4 cup white grape juice after caramelizing the onions.
  • Substitute Gruyère with mozzarella or Swiss cheese if preferred.
  • Leftovers can be stored in an airtight container for up to 3 days.
