- 6 medium russet potatoes, peeled and diced
- 6 slices thick-cut bacon, cooked and crumbled
- 1 medium yellow onion, chopped
- 3 garlic cloves, minced
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 4 green onions, sliced (for garnish)
- Salt and pepper to taste
Instructions
- Prep Ingredients: Peel and dice potatoes. Cook bacon until crispy, crumble, and reserve drippings. Chop onion and mince garlic.
- Sauté Aromatics: Heat bacon drippings in a pot. Sauté onion and garlic until translucent (5 minutes).
- Cook Potatoes: Add potatoes, season with salt and pepper, and pour in chicken broth. Bring to a boil, reduce heat, and simmer for 15-20 minutes until potatoes are tender.
- Blend Soup: Use an immersion blender or standard blender to puree until smooth. Return to pot.
- Finish and Serve: Stir in heavy cream and crumbled bacon. Heat through for 5 minutes. Serve hot, garnished with green onions.
