  • 4 green onions, sliced (for garnish)
  • Salt and pepper to taste

Instructions

  • Prep Ingredients: Peel and dice potatoes. Cook bacon until crispy, crumble, and reserve drippings. Chop onion and mince garlic.
  • Sauté Aromatics: Heat bacon drippings in a pot. Sauté onion and garlic until translucent (5 minutes).
  • Cook Potatoes: Add potatoes, season with salt and pepper, and pour in chicken broth. Bring to a boil, reduce heat, and simmer for 15-20 minutes until potatoes are tender.
  • Blend Soup: Use an immersion blender or standard blender to puree until smooth. Return to pot.
  • Finish and Serve: Stir in heavy cream and crumbled bacon. Heat through for 5 minutes. Serve hot, garnished with green onions.
