This savory and tender French Onion Pot Roast is cooked to perfection in an Instant Pot, combining the deep caramelized flavors of onions with rich beef chuck roast. It’s an effortless yet flavorful meal that’s perfect for weeknight dinners or special occasions.
Ingredients
- Beef chuck roast: 3-4 lbs
- Yellow onions: 4, thinly sliced
- Beef broth: 2 cups (low-sodium preferred)
- Olive oil: 2 tbsp
- Garlic: 2 cloves, minced
- Dried thyme: 1 tsp
- Bay leaf: 1
- Salt and pepper: To taste
Instructions
- Sauté the Onions
- Using the sauté function of your Instant Pot, heat olive oil and caramelize the onions with a pinch of salt for 10-15 minutes. Add garlic and thyme, cooking for 1 minute.
- Brown the Beef
- Season the beef chuck roast with salt and pepper. Sear each side for 4-5 minutes until browned. Remove temporarily.
- Deglaze and Cook
- Deglaze the pot with ½ cup of beef broth, scraping up browned bits. Return the roast to the pot, add the remaining broth and the bay leaf. Lock the lid and pressure cook on high for 60 minutes. Let the pressure naturally release for 10 minutes, then quick release the rest.
- Finish and Serve
- Remove the bay leaf, adjust seasonings, and serve hot with fresh herbs or alongside mashed potatoes or crusty bread.
Notes
- For added flavor, serve with a sprinkle of Gruyère cheese or fresh parsley.
- Leftovers can be stored in the fridge for up to 3 days or frozen for 2 months.
