Description

Ingredients

  • Beef chuck roast: 3 lbs
  • Dried guajillo chiles: 5-6, stems and seeds removed
  • Onion: 1 large, quartered
  • Garlic: 4 cloves, crushed
  • Ground cumin: 1 tsp
  • Oregano: 1 tbsp
  • Black pepper: 1 tsp
  • Salt: To taste
  • Beef or chicken broth: 4 cups
  • Vegetable oil: 2 tbsp

Instructions

  1. Prep Ingredients
    • Soak guajillo chiles in hot water for 15-20 minutes until softened.
  2. Make the Sauce
    • Blend softened chiles, onion, garlic, cumin, oregano, black pepper, salt, and 1 cup of broth until smooth.
  3. Sear the Meat
    • Heat oil in a large pot over medium-high heat. Sear beef chuck roast on all sides until golden brown (4-5 minutes per side).
  4. Cook the Birria
    • Add the blended sauce and remaining broth to the pot. Ensure the meat is submerged. Cover and simmer on low heat for 3-4 hours, or until the meat is tender and shreds easily.
  5. Serve
    • Shred the beef and serve with warm tortillas, fresh lime, and diced onions, or as a stew with the flavorful broth.

Notes

  • Substitute guajillo chiles with ancho or pasilla chiles if unavailable.
  • Add a touch of vinegar or lime juice to brighten the flavors.
