Ingredients
Scale
- 6 medium russet potatoes, peeled and diced
- 6 slices thick-cut bacon
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese

Instructions
- Cook the bacon: Fry bacon until crispy in a large pot. Reserve some bacon drippings for sautéing.

- Blend the soup: Blend the mixture until smooth using an immersion blender or regular blender.
- Add cream and cheese: Stir in heavy cream and shredded cheddar until smooth and creamy.
- Serve and garnish: Ladle soup into bowls and garnish with chopped bacon and sliced green onions.
Notes
- Adjust soup thickness by adding more broth if needed.
- For a chunkier texture, pulse the soup instead of blending fully.
