Instructions
- Boil Potatoes:
Place peeled and chopped potatoes in a pot with salted water. Boil until fork-tender (15-20 minutes). Drain thoroughly. - Mash and Mix:
Mash potatoes until smooth. Mix in cheddar cheese, beaten eggs, salt, pepper, and herbs (if using). Stir until fully combined. - Shape and Coat:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Shape 2-tbsp portions of the mixture into balls or patties, then roll in breadcrumbs to coat. - Bake:
Arrange coated puffs on the baking sheet. Bake for 20-25 minutes or until golden brown. - Serve:
