Description

Cheesy Mashed Potato Puffs are bite-sized, golden delights packed with creamy mashed potatoes, sharp cheddar cheese, and a crispy breadcrumb coating. These versatile treats are perfect for appetizers, snacks, or a fun twist on a side dish.

 


Ingredients

  • 2 lbs russet potatoes, peeled and cut into chunks
  • 1 cup shredded sharp cheddar cheese
  • 2 large eggs, lightly beaten
  • 1 cup breadcrumbs (plain or seasoned)
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh chives or parsley, chopped (optional)

Instructions

  • Boil Potatoes:
    Place peeled and chopped potatoes in a pot with salted water. Boil until fork-tender (15-20 minutes). Drain thoroughly.
  • Mash and Mix:
    Mash potatoes until smooth. Mix in cheddar cheese, beaten eggs, salt, pepper, and herbs (if using). Stir until fully combined.
  • Shape and Coat:
    Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Shape 2-tbsp portions of the mixture into balls or patties, then roll in breadcrumbs to coat.
  • Bake:
    Arrange coated puffs on the baking sheet. Bake for 20-25 minutes or until golden brown.
  • Serve:
    Allow to cool slightly, then serve warm as a snack or side dish.

Notes

  • Swap cheddar cheese for mozzarella, gouda, or pepper jack for different flavors.
  • For extra crispiness, use panko breadcrumbs.
  • These puffs can be prepped ahead and frozen before baking for an easy make-ahead option.
