- 2 lbs potatoes, peeled and grated
- 1 medium onion, grated
- 2 large eggs
- 1/4 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup vegetable oil or clarified butter
Instructions
- Prepare Ingredients: Peel and grate the potatoes, then rinse and drain well to remove excess starch. Grate the onion and set aside.
- Mix Batter: In a bowl, combine grated potatoes, onion, eggs, flour, salt, and pepper. Stir until evenly mixed. If the mixture feels too wet, add a little more flour.
- Heat Pan: Heat oil or butter in a large skillet over medium-high heat until shimmering.
- Fry Pancakes: Scoop 1/4 cup of batter into the pan, flattening it into a round shape. Fry for 3-4 minutes per side until golden brown and crisp. Repeat with remaining batter, adding more oil as needed.
- Serve Warm: Keep finished pancakes warm in a low oven while frying the rest. Serve immediately with applesauce or sour cream, if desired.

- Use starchy potatoes like Russets for the crispiest results.
