Description

Crispy on the outside and tender on the inside, these traditional German potato pancakes are a delicious comfort food. Perfectly seasoned and fried to golden perfection, they’re an irresistible treat for any time of the day!

  • 2 lbs potatoes, peeled and grated
  • 1 medium onion, grated
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup vegetable oil or clarified butter

Instructions

  1. Prepare Ingredients: Peel and grate the potatoes, then rinse and drain well to remove excess starch. Grate the onion and set aside.
  2. Mix Batter: In a bowl, combine grated potatoes, onion, eggs, flour, salt, and pepper. Stir until evenly mixed. If the mixture feels too wet, add a little more flour.
  3. Heat Pan: Heat oil or butter in a large skillet over medium-high heat until shimmering.
  4. Fry Pancakes: Scoop 1/4 cup of batter into the pan, flattening it into a round shape. Fry for 3-4 minutes per side until golden brown and crisp. Repeat with remaining batter, adding more oil as needed.
  5. Serve Warm: Keep finished pancakes warm in a low oven while frying the rest. Serve immediately with applesauce or sour cream, if desired.

Notes

  • Use starchy potatoes like Russets for the crispiest results.
  • Squeeze excess liquid from grated potatoes to prevent soggy pancakes.
