Ingredients

  • 2 ripe bananas, mashed (~1 cup)
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  • Preheat Oven: Preheat to 350°F (175°C) and line baking sheets with parchment paper.
  • Mash Bananas: Mash bananas in a bowl until smooth but slightly chunky.
  • Cream Butter and Sugars: In a mixing bowl, cream butter, granulated sugar, and brown sugar until fluffy. Beat in egg and vanilla.
  • Mix Dry Ingredients: In a separate bowl, whisk flour and baking soda. Gradually mix into the wet ingredients.
  • Fold In Bananas and Chocolate Chips: Gently fold in mashed bananas and chocolate chips until evenly combined. Chill dough for 30 minutes.
  • Scoop and Bake: Scoop tablespoon-sized balls onto prepared baking sheets, spacing them 2 inches apart. Bake for 10-12 minutes or until edges are golden. Cool on the tray for 5 minutes before transferring to a rack.

Notes

  • For extra flavor, add a pinch of cinnamon or a handful of chopped nuts.
  • Ensure bananas are very ripe for the best sweetness and texture.
  • Cookies may appear soft when removed but will firm up as they cool.
