- 1 cup bell peppers, sliced (mix of red, yellow, and green)
- 1 medium yellow onion, thinly sliced
- 3 tbsp soy sauce, divided
- 3 cloves garlic, minced
- 1 tbsp cornstarch, mixed with water (for slurry)
- 1 tbsp sesame oil, plus more for cooking
- ½ tsp ground black pepper
Instructions
- Marinate the Beef: In a bowl, combine 2 tbsp soy sauce, minced garlic, cornstarch, and black pepper. Toss the steak slices to coat. Marinate for 20 minutes (up to 2 hours for deeper flavor).
- Prepare the Vegetables: Slice the onions and bell peppers into even pieces. Set aside.
- Cook the Beef: Heat 1 tbsp sesame oil in a skillet or wok over medium-high heat. Sear the beef strips until browned (4 minutes). Remove and set aside.
- Sauté the Vegetables: In the same skillet, add onions and cook for 2 minutes. Add bell peppers and stir-fry until tender-crisp (3 minutes).
- Combine and Thicken: Return the beef to the skillet. Stir in 1 tbsp soy sauce and pour in the cornstarch slurry. Cook until the sauce thickens (1 minute).
- Serve: Garnish with chopped green onions if desired and serve hot over rice or noodles.
Notes
- For extra flavor, add a splash of rice vinegar or oyster sauce to the marinade.
- Adjust soy sauce for less sodium, or substitute with tamari for a gluten-free option.
