Ingredients

  • Ube Powder: 200g
  • Eggs: 4 large (room temperature)
  • Granulated Sugar: 150g
  • All-Purpose Flour: 120g
  • Baking Powder: 1 tsp (5g)
  • Milk: 60ml
  • Vanilla Extract: 1 tsp (5ml)
  • Whipped Cream or Cream Cheese Filling: 250ml heavy cream or 200g cream cheese (optional, sweetened to taste)

Instructions

  1. Prepare the Batter:
    • Preheat oven to 350°F (180°C) and line a baking pan with parchment paper.
    • Whip eggs and sugar until pale and fluffy.
    • Sift together flour and baking powder. Gently fold into the egg mixture.
    • Add milk, vanilla extract, and ube powder, folding gently until combined.
  2. Bake the Cake:
    • Pour batter into the prepared pan, spreading evenly.
    • Bake for 15–20 minutes or until the cake springs back when touched.
    • Let cool slightly before turning it onto a towel dusted with powdered sugar.
  3. Prepare the Filling:
    • For whipped cream, beat cream with sugar to soft peaks.
    • For cream cheese filling, mix softened cream cheese with powdered sugar until smooth.
  4. Assemble the Roll Cake:
    • Spread filling evenly on the cooled cake, leaving edges bare.
    • Roll tightly, starting at one short end. Wrap in parchment and refrigerate to set.
