Description

A hearty, creamy soup filled with lean ground beef, tender potatoes, and melted sharp cheddar cheese. This comforting dish combines savory flavors in every spoonful, perfect for warming up on a chilly day.


Ingredients

  • 1 lb lean ground beef
  • 4 medium russet potatoes (peeled and diced)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 4 cups low-sodium beef broth
  • 2 cups shredded sharp cheddar cheese
  • 1 cup milk or heavy cream
  • Salt & pepper (to taste)

Instructions

  • Brown the ground beef: Cook beef in a large pot over medium heat until browned, breaking it apart as it cooks. Drain excess fat.
  • Sauté onions and garlic: Add chopped onion and minced garlic to the pot. Sauté for 3-4 minutes until fragrant.
  • Add potatoes and broth: Stir in diced potatoes and beef broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  • Add cheese and cream: Lower heat, then stir in cheddar cheese and milk or cream. Simmer for an additional 5 minutes, stirring until cheese melts and the soup becomes creamy.

Notes

  • For a richer soup, use heavy cream instead of milk.
  • Adjust seasoning with salt and pepper to taste.
  • You can also add a pinch of paprika or thyme for extra flavor.
