- 4 medium russet potatoes (peeled and diced)
- 1 medium onion (chopped)
- 2 cloves garlic (minced)
- 4 cups low-sodium beef broth
- 2 cups shredded sharp cheddar cheese
- 1 cup milk or heavy cream
- Salt & pepper (to taste)
Instructions
- Brown the ground beef: Cook beef in a large pot over medium heat until browned, breaking it apart as it cooks. Drain excess fat.
- Sauté onions and garlic: Add chopped onion and minced garlic to the pot. Sauté for 3-4 minutes until fragrant.
- Add potatoes and broth: Stir in diced potatoes and beef broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
- Add cheese and cream: Lower heat, then stir in cheddar cheese and milk or cream. Simmer for an additional 5 minutes, stirring until cheese melts and the soup becomes creamy.
Notes
- For a richer soup, use heavy cream instead of milk.
