Instructions
Step One: Cook Your Pasta
- Bring a large pot of salted water to a boil. Once boiling, add the pasta of your choice and cook according to the package instructions, typically around 7-9 minutes, until al dente. Stir occasionally to prevent sticking.
- Once the pasta is cooked, drain it in a colander, reserving about 1/2 cup of the pasta cooking water. This starchy water will help adjust the consistency of the sauce later. Optionally, rinse the pasta briefly under cold water if you want to reduce stickiness. Set the pasta aside.
Step Two: Make the Cashew Cream Sauce
- While the pasta is cooking, prepare the cashew cream sauce. In a high-speed blender or food processor, combine the soaked and drained cashews, nutritional yeast, almond milk, garlic powder, lemon juice, salt, and pepper.
- Blend until completely smooth. If the mixture is too thick, gradually add the reserved pasta cooking water until the sauce reaches a creamy, pourable consistency that resembles melted cheese. Taste the sauce and adjust the seasoning if necessary, adding more salt, pepper, or nutritional yeast as desired.
Step Three: Combine Pasta & Sauce
- Once your pasta is cooked and drained, place it back into the pot over medium heat. Pour the prepared cashew cream sauce over the pasta, ensuring it coats every piece.
- Stir gently but thoroughly, warming the pasta and sauce together for about 2 minutes until everything is heated through and well combined. The sauce will thicken slightly as it warms, giving the dish a rich, cheesy texture.
Step Four: Serve Immediately
- Serve the Vegan Mac and Cheese immediately while it’s hot and creamy. Garnish with fresh herbs like parsley, chives, or green onions for added flavor and a burst of color.
