  • 1 cup granulated sugar
  • 4 large eggs
  • 1 cup brewed espresso (cooled)
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • ½ cup unsweetened cocoa powder
  • ½ cup bittersweet chocolate (for ganache)
  • ½ cup heavy cream (for ganache)

Instructions

  1. Preheat oven to 350°F (175°C). Line a jelly roll pan with parchment paper and lightly grease.
  2. Whisk eggs and sugar until fluffy. Gradually fold in flour until just combined.
  3. Pour batter into the prepared pan and bake for 12-15 minutes or until golden brown. Cool slightly, then flip onto a powdered sugar-dusted towel.
  4. Beat mascarpone and heavy cream until soft peaks form. Mix in cooled espresso thoroughly.
  5. Spread filling over the cooled cake, roll tightly using the towel as a guide, and place seam-side down.
  6. For ganache, heat equal parts cream and chopped chocolate until melted and smooth; cool slightly before pouring over the rolled cake.
  7. Refrigerate for at least one hour before serving; dust with cocoa powder right before slicing.
