Ingredients
- 1 cup fresh strawberries, hulled and halved
- 1 cup fresh blueberries
- 1 cup plain Greek yogurt
- 2 tablespoons honey or maple syrup (adjust to taste)
- 1/4 cup water (more if needed)
Instructions
- Wash strawberries and blueberries thoroughly. Blend strawberries with 2 tablespoons of honey (or maple syrup) and 1/8 cup of water until smooth.
- Pour the strawberry mixture into popsicle molds, filling them one-third full. Freeze for about 30-45 minutes until slightly firm.
- In a bowl, mix Greek yogurt with remaining honey until smooth. Pour this over the strawberry layer in molds until two-thirds full. Freeze again for another 30-45 minutes.
- Blend blueberries with remaining water and sweetener until smooth. Pour over the yogurt layer, filling molds nearly to the top.
- Insert sticks and freeze for at least 4 hours or until solid. To release, run warm water over the outside of the molds.
