Description

Red White and Blue Popsicles are a refreshing and vibrant summer treat that combines the sweetness of strawberries, the creaminess of yogurt, and the tartness of blueberries. Ingredients

  • 1 cup fresh strawberries, hulled and halved
  • 1 cup fresh blueberries
  • 1 cup plain Greek yogurt
  • 2 tablespoons honey or maple syrup (adjust to taste)
  • 1/4 cup water (more if needed)

Instructions

  1. Wash strawberries and blueberries thoroughly. Blend strawberries with 2 tablespoons of honey (or maple syrup) and 1/8 cup of water until smooth.
  2. Pour the strawberry mixture into popsicle molds, filling them one-third full. Freeze for about 30-45 minutes until slightly firm.
  3. In a bowl, mix Greek yogurt with remaining honey until smooth. Pour this over the strawberry layer in molds until two-thirds full. Freeze again for another 30-45 minutes.
  4. Blend blueberries with remaining water and sweetener until smooth. Pour over the yogurt layer, filling molds nearly to the top.
  5. Insert sticks and freeze for at least 4 hours or until solid. To release, run warm water over the outside of the molds.
