  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup whole milk
  • ½ cup strong brewed coffee (or espresso)
  • ½ cup unsalted butter, melted
  • 1 tsp vanilla extract
  • For the Frosting: 8 oz cream cheese, at room temperature
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, and sugar.
  3. In another bowl, mix eggs, milk, coffee, melted butter, and vanilla until smooth.
  4. Combine wet ingredients into dry ingredients; stir until just mixed.
  5. Fill cupcake liners two-thirds full with batter and bake for 18–20 minutes or until a toothpick comes out clean.
  6. While cooling, prepare the frosting by blending cream cheese and powdered sugar until creamy.
  7. Once cooled, frost each cupcake generously.
