  • 3 medium zucchinis, sliced
  • 4 cups fresh baby spinach
  • 15 oz ricotta cheese
  • 2 cups shredded low-moisture mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. In a skillet over medium heat, heat olive oil and sauté garlic until fragrant. Add zucchini and cook for about five minutes until slightly tender, then stir in spinach until wilted. Season with salt and pepper.
  3. Spread a thin layer of marinara sauce on the bottom of the baking dish. Layer zucchini-spinach mixture, dollops of ricotta, a sprinkle of mozzarella, and more marinara. Repeat layers until all ingredients are used up.
  4. Top with remaining mozzarella and Parmesan cheese.
  5. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until bubbly and golden brown.
  6. Let cool for five minutes before slicing into squares.
